I made this Mint Bark into Personalised and Clock Mint Crips for New Years Eve Party
You will need:
100g of best quality dark chocolate with a high cocoa solid content (Green and blacks is good)
10 Mint humbugs or any similar mint sweet
A couple of squares of white chocolate & any decorations that take your fancy.
Note. For those that dont know: Humbugs are a crispy mint sweet, with a chewey mint centre. Their chewey centre stops them being brittle when you go for very thin sweets.
1. Break the chocolate into small pieces, and melt gently. Set aside to cool slightly.
Most recipes call for a double burner, but personally I always use a low setting on my microwave, stirring occasionally until all smooth, and ive never had a problem.
2. Put the humbugs in a ziplock bag, and bash to smithereens with your rolling pin. Its nice to have adhoc sizes, so dont worry if they arent all pounded too much. I like mainly humbug dust, with about 25% as slightly larger pieces.
3. Add the humbug crumbs to your chocolate, and pour onto some baking paper, either as a single sheet, or individual chocolates.
4. Melt the white chocolate gently, and pipe (probably better than my efforts), your friends initials. I added a few clocks, as we had a NY theme.
Sprinkle with edible glitter.
To pipe the white chocolate, I took a piece of baking paper. Folded in half, then in half two more times, until you get a dart shape. Trim the edges to make a cone shape.
Open out the cone.
Fill with chocolate or icing as required, and push to the bottom.
Easier, if you put the cone in a cup to hold, so you can use 2 hands.
To pipe, snip a tiny amount on the bottom of the paper, and away you go.
