Sausage and Veggie Picnic Rolls (In Scotland these may pass for 1 of your 5 a day)



Abbi and a few of her friends organised a last minute picnic a few weeks ago.

A touch stereotypical, the mums (i.e. not the dads) were all assigned the picnic items we had to bring! I was allocated "something savoury".

I'm not a huge sausage roll fan - Our local bakery sometimes does a sausage and veg combo that you can convince yourself is not cardiac arrest on a plate, so Abbi and I had a go at reproducing these bad boys.  The bakery puts lots of sage it their sausage rolls, which I dont love.  I also guessed at the veg - but I think any root veg would be great here.

We took a packet of chipolata sausages, removed the skins and grated some celery (2 sticks), 1 carrot and half a red onion and a teaspoon of mustard.

We added enough flour to bind together. (Bread crumbs would have been better, but we didnt have any handy).

Roll out the pastry, and layer the sausage meat along half. Fold the pastry and crimp.  Brush with an egg, and bake for 18-20 mins at 180 degree.

Fridge to picnic rug in 30 minutes.  Gone in 5.
