Baked courgette crisps


Im a big courgette fan, and have just come back from a holiday in Crete where we had them almost every day.

In the past, I have made them pan fried with just a little flour egg and seasoning, but I thought I'd give a non fried version a whirl.

I cut the courgette into strips and dropped them in beaten egg, seasoned flour.  These need a lot of seasoning, so don't stint.

Dip in egg again, and then finally panko breadcrumbs.  I laid them on a baking sheet and put in a pre heated oven (180 degrees) for around 20-25 mins, or until golden brown.  






 Served with a spicy salsa.



Both children expressed a fair degree of interest on hearing that I was making "crisps".  This waned very quickly on realising that they were not potato crisps....  They were eyed suspiciously by Jamie and given a very wide berth by Abbi.  Unfortunately I didnt manage to convert either of them.  I will persevere.
