This delicious never fail ham in coca cola, is an easy to cook Nigella recipe.
I dont the know the science behind it, but the coke works is sugary molasses magic on the meat, and makes it very tender. Nigella suggests about 2.5 hours for the simmering in coke, but always leave it closer to 4 hours of simmering - it doesnt dry out, and the ham becomes more like pulled pork.
Cheesy potatoes (or cheesy veg) go really well with this.
Boil the potatoes (to just cooked), slice to wedges or thick slices about 2 cm wide, and place in deep dish
Add the oil and flour to make a roux, mixing in the milk until thick, followed by the cheese.
Pour over the potatoes (or veg), being really generous. Sprinkle the top with grated cheese and breadcrumbs for a crunchy topping.
Instead of potatoes, you could use vegetables (broccoli, leeks, carrots, cauliflower)....I often sneak a few others like brussel sprouts in.....the kids dont seem to object so long as they are nesstled under the cheesy sauce blanket. Definitely dont stint on the sauce.
