I love courgettes, and sneak them in almost any recipe I can. (Despite the fact that my kids usually hate them). A few weeks ago an old friend came for lunch - Perfect opportunity to make Courgette Mint and Feta Fritters. I didn't have a recipe, so went experimental.
Ingredients:
2 medium courgettes
1 small pack of feta cheese
1 medium egg
Large handful of fresh mint
Flour
Seasoning
Small amount of oil for frying
This made about 10-12 fritters, depending upon size you make. (Mine were about 5cm diam - 3 for lunch was about right).
Method:
Roughly grate the courgette, and squeeze any excess liquid out.
Crumble and add the feta and shredded mint to a bowl.
Add a few tablespoons of flour and seasoning to the mix, and add the beaten egg. Adjust the flour quantity to ensure your fritters will bind together.
Make little pattys, and fry lightly on each side.
They were slighly more pancakey than I was looking for, but still quite tasty.
Very "courgettey".
I would make these again, but would try with some raising agent (bicarb or SR flour). I may also try baking in the oven for a healthier version next time.
I added a yogurt, lime and mint dressing for the salad and fritters, (but it really wasnt needed).
