My go to pudding when i have 5 minutes to spare or a large crowd to feed is Lemon Posset. But Its become so samey, wanted a variation.
I guess orange posset would be quite sickly (let me know if you've tried it), and lime a bit too tart. I thought I would give grapefruit posset a whirl.
I pretty much just substituted grapefruit for lemon in my trust posset recipe.....I love the bitterness of grapefruit, so was sure it would be similar. I was also hoping for a beautiful lucious pink, as the grapefruits were ruby red.
(n.b The shortbread was home made, just not by me. I stole it from Jamies cookery club at school. Shhh don't tell him).
Ingredients:
600ml double cream
Grapefruit zest and half the juice (about 75ml in mine)
180g Caster sugar
This made around 10 possets.
Warm the cream and dissolve the sugar, without letting the cream boil.
Add the juice and zest of the grapefruit. This gave the possets a lovely pinkish colour (not as pink as I would have liked). Annoyingly it doesnt come out in the pictures.
Bring the mixture to the boil until this thickens and set aside to cool slightly.
1) The easiest way to fill your glasses or bowls, is to pour the posset into a jug, and fill from there - a lot less spills, and splashes down your pots.
2) Fill your pots or glasses on a tray, and put the tray in the fridge...less chance of spilling.
Chill for abour 4 hours minimum, or ideally overnight.
I actually found these disappointing in comparison to the usual lemon version....the flavour of grapefruit was nice, but they were too sweet for me - I missed the really tangy lemony flavour to cleanse the palate.
I ended up serving them anyway, along with another option....I would say the judges were split 50:50.....or maybe 50% of my guests are just too polite!!
Hmmmmm. I may experiment with this....I think increasing the grapefruity impact and reducing the sugar may work....but I will have to play around with the quantities to make sure it still sets - and not sure I want to eat enough grapefruit possets to get it right!
If I do make it again, I would do with a spicy ginger snap, and maybe some grapefruit segments on top. If anyone else has done a more successful grapefruit posset, let me know.
